My name is Luisa and I’m the creator behind Happy Rabbit Vegan. I share simple and delicious vegan recipes that can be enjoyed by everyone! I aim to focus on seasonal ingredients, and try to strike a balance with whole food recipes and more “indulgent” ones. I’m passionate about vegan food, and my goal is to show how flavorful and accessible it can be to anyone.
My story
I grew up in beautiful Oregon. My first exposure to veganism came as a teenager when one of my friends went vegan. While I was interested in the lifestyle, at the time, going vegan didn’t seem like an option to me because I relied on my parents for buying groceries and cooking.
It wasn’t until about 15 years later that I decided to go vegan in January 2022. My husband and I watched the documentary, The Game Changers, and we immediately made the switch to veganism. Initially, we decided to stop eating animal products after learning how they can have a harmful impact on health. I dug into as much research as I could find from credible and trusted sources, and learned about the many benefits of a plant-based diet. After I went vegan, it didn’t take long before I noticed positive changes.
In the months that followed, I also learned about the animal agriculture industry and its cruel and unethical treatment of animals, along with its detrimental impact on the planet. My reasons for going vegan quickly expanded to include the health of the planet and animal rights.

What’s behind the name Happy Rabbit Vegan?
I am a lover of all animals, both wild and domestic. Rabbits Chichi and Wynton have been members of my family for many years and they inspired the name for my blog.
